The first time I tried these sweet potato wedges, I was blown away by how good they actually tasted. This recipe will definitely spice up your regular potatoes! They have a golden brown color on the outside and a creamy and tender texture, making them irresistibly addicting. You can eat them as is, but they are so much better with a dip. Garlic yogurt dipping sauce

Put your rack in the center of your oven and preheat it to 400F. Lightly coat a rimmed baking sheet with cooking spray or oil.
Scrub the sweet potatoes thoroughly, then dry and peel them. You can leave the skin if you prefer.
Cut every piece in half, then cut each half in half again lengthwise. Lay them flat side down, and slice into wedges.
Transfer the sweet potato wedges into a large bowl, then add avocado oil, curry powder, cumin, smoked paprika, and salt. Toss it all together using your hands to ensure everything are evenly coated.
Place the wedges into a single layer on your prepared baking sheet, making sure they are spaced and that the pan is not overcrowded.
Put inside the oven and bake for 15 minutes. After that turn them over with a spatula and place back in the oven. Bake for another 10 to 15 minutes, until lightly browned and tender when pierced with a fork.
Make the dipping sauce. Combine garlic, garlic powder (optional), yogurt, vinegar, parsley, and salt in a small bowl.
Serve your roasted sweet potato wedges alongside the garlic yogurt dipping sauce. Enjoy!
