Ingredients:

  • 2 cups sweet potatoes (mashed)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp + a pinch of salt
  • 1 1/2 tbsp lemon juice
  • 1 1/2 tbsp pure vanilla extract
  • 1/3 cup half n half (room temp)
  • 2 eggs (room temp)
  • 1 tbsp flour
  • 4 tbsp unsalted butter, melted
  • 1 – 9″ deep dish pie shell

Directions:

Step 1

Wash the sweet potatoes thoroughly and prick a few holes all around them using a knife or a fork. Place them on a baking sheet lined with parchment paper, and bake them at 425 degrees F for one hour or until tender. Once done, let them cool completely. Now, peel the sweet potatoes, mash them, then whisk using an electric mixer until smooth. After this, add 1/2 cup brown sugar, 1/2 cup granulated sugar, 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp allspice, 1/4 tsp + a pinch of salt, 1 1/2 tbsp pure vanilla extract, 1 1/2 tbsp lemon juice, 4 tbsp melted unsalted butter, and 1/3 cup half n half. Continue mixing until everything is well combined, then mix in the two eggs and  1 tbsp flour.

Step 2

Now, pour the mixture into the pie shell, smoothing out the top. Bake at 350 degrees F for 40 to 50 minutes. After baking, let the pie set for a couple of hours, then serve. Enjoy!
