Ingredients

  • 1 cup of sugar
  • 2 teaspoons of lemon zest
  • 1/2 cup of softened butter
  • 2 tablespoons of vegetable oil
  • 2 large eggs
  • 2 tablespoons of lemon juice
  • 1 and 1/2 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of milk

For the lemon glaze:

  • 1/3 cup of icing sugar
  • 2 tablespoons of lemon juice

Instructions:

Step 1:

In a bowl, add 1 cup of sugar and 2 teaspoons of lemon zest. Mix using a spatula or spoon. Next, add 1/2 cup of softened butter and combine with the sugar. Pour 2 tablespoons of vegetable oil. Switch to a whisk and mix until light and fluffy or pale yellow.

Step 2:

Add 2 eggs one at a time and mix after every addition. Next, add two tablespoons of lemon juice and whisk. Scrape the sides and bottom of the bowl.

Step 3:

Sift 1 and 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt into the same bowl. Mix until there are no traces of flour.

Step 4:

Pour 1/2 cup of milk and combine well with a whisk until smooth. Do not overmix the batter.

Step 5:

Pour the mixture into an 8x3x3 inches loaf pan with parchment paper. Spread the top with a spatula and thump the pan on a surface until leveled.

Step 6:

Place in a preheated oven at 320 degrees F and bake for 40 to 50 minutes.

Step 7:

While the cake is in the oven, make the lemon glaze. In a bowl, combine icing sugar and lemon juice. Mix until smooth and thick.

Step 8:

Take the cake out of the oven and glaze. Put some more lemon zest on top. Slice the cake, place it on a plate, then serve. Enjoy!
