These super crispy potato fritters have always been a family favorite snack. I learned about this recipe through Toasted on Youtube when I was looking for potato recipes. We were amazed at how fantastic it turned out on the first try that we decided to make it every weekend. You can serve this with cheese, ketchup, sour cream, or your preferred sauce. Fill a pot with water and place the potatoes. Boil them until soft and cooked through. Once done, carefully peel and grate them. Place in a large bowl.
Peel the carrot and grate it as well. Add to the grated potatoes.
Chop 1/4 cup of coriander and add to the vegetables, followed by 1/4 cup of cornflour, 1/2 teaspoon of black pepper, and 1/2 teaspoon of salt. Mix everything until well combined and it forms a dough.
Transfer the mixture into a piping bag. If you don’t have one, you can use a plastic bag or zip lock bag and cut one of the corners.
Heat a generous amount of vegetable oil in a pan. Once the oil is hot, squeeze the mixture and cut it into small balls using clean kitchen scissors just as shown below. Fry them until golden brown.
Prepare a plate lined with parchment paper. Once the potato fritters are crispy and browned, remove them using a slotted spoon to drain the vegetable oil, then transfer them to the prepared plate.
Serve with your preferred sauce. Consume immediately while still crispy. Enjoy!
