Ingredients:

  • 100 oz potatoes
  • 1 tbsp vegetable oil
  • 1/2 tsp salt

Potato Filling:

  • 7 oz streaky bacon, chopped into small batons
  • 8 tbsp unsalted butter
  • 1/3 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 3 green onions, finely sliced
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

For Serving:

  • 1 1/2 tbsp chives, finely chopped
  • sour cream

Directions:

Step 1

Preheat your oven to 430 degrees F. Next, prick the potatoes eight times with a fork, rub vegetable oil on each piece, and season with salt. Place them on a baking rack, and bake for 75 minutes. After this, cut each potato in half, spoon out the inside, and place the potato flesh in a large bowl. Mash it further, then set it aside. In a large pan, fry the chopped bacon and drain on a paper towel. Next, in a saucepan, melt 8 tbsp unsalted butter, then add 1/3 cup heavy cream. Mix well, then pour it on the mashed potatoes.

Add the fried bacon, chopped green onion, shredded cheddar cheese, 1/4 tsp salt, and 1/4 tsp ground black pepper. Mix well to combine.
