Searching for an inexpensive and filling meal for your whole family? Why don’t you try this stuffed cabbage with beef and rice by Everyday Food? Each cabbage leaf is filled with a flavorful meat mixture and topped with a homemade tomato sauce. It’s a great dish option for lunch or dinner at home.

Fill a large pot with water and add some salt. Let it come to a boil. Once boiling, add the cabbage and cook until tender for 15 to 20 minutes while turning often. Drain and gently separate leaves with tongs. Cut out thick ribs from 8 to 10 of the largest leaves and set them aside. Shred the remaining cabbage and put it in an 8-inch square baking dish on a baking sheet.
Preheat oven to 375 degrees. Place a medium saucepan over medium-high heat and add the oil. Once hot, add the onion and cook until soft for about 5 minutes. Next, add the garlic and saute until fragrant for a minute. Transfer half of the mixture to a large bowl. To the remaining onion and garlic in the saucepan, add tomatoes, sugar, and vinegar. Season with salt and pepper, then let it come to a boil. Reduce the heat and let it simmer for 10 minutes.
Spread about a cup of tomato sauce on top of shredded cabbage in the dish.
To the bowl with the onion mixture, add rice, ground beef, and egg. Season it with salt and pepper, then mix well with your hands. Divide it into 8 equal portions. Work with a few leaves at a time, and lay a cabbage flat on your work surface. Overlap smaller leaves to form a larger leaf if necessary. Add a portion of beef in the center of each cabbage, fold the bottom half, then fold the sides and roll it up tightly. Place the cabbage rolls, seam side down, to the baking dish.
Top the cabbage rolls with the remaining sauce, cover the baking dish with foil, and bake on a sheet for 40 minutes. Once done, remove foil and bake until the sauce is bubbling for about 10 minutes.
