First, in a stand mixer or hand-held mixer, beat the cream, powdered sugar, and vanilla until stiff peaks form. Then, place a thin layer of cream at the bottom of a square pan. Next, add a single layer of graham crackers.

Next, continue to assemble and repeat the layers of the strawberry icebox cake. End the top layer with strawberries. Cover with plastic wrap and refrigerate for at least 4 hours or overnight before serving.
Overall, this would be a refreshing cake during any time of the year, but I think it’s perfect for the summer because of the fresh fruit. It’s light and made with simple ingredients. Plus it’s a pretty dessert if you make this in a clear glass baking dish. I feel like I could eat a lot of this dessert without feeling super heavy compared to a thick filling cake. Also, you can replicate this dessert and make it your own with other fruits too.
