This spinach and ricotta puff pastry from My food memoirs on YouTube is a fabulous dish you can serve whether for breakfast, lunch, or dinner. It comes together quickly and easily and you’ll only need a few ingredients you might already have in your pantry.

In this step by step instructions, My food memoirs will teach you how to make this fantastic puff pastry in the comforts of your home. It’s quick and easy, and just perfect for busy weeknights. Learn how to make it by watching the video below for the step by step process. 

Ingredients:

  • fresh spinach
  • 1 cup grated parmesan
  • 1 cup ricotta
  • 1/4 cup grated mozzarella
  • 1 tsp salt
  • ground black pepper
  • a pinch of nutmeg
  • store-bought rolled puff pastry
  • 1 egg

Directions:

Step 1

In a large bowl, add 1 cup ricotta, 1 cup grated parmesan, 1/4 cup grated mozzarella, a pinch of nutmeg, and some ground black pepper. Mix well to combine. After this, stir in the blanched spinach into the mixture. Set it aside. Next, flour your working surface and lay the store-bought puff pastry. Roll it out gently, then split it into four quarters. Once done, spoon in the spinach mixture and spread it evenly and nicely on one half, leaving about a centimeter and a half space on the edge of the pastry to help with the sealing.

Step 2

After this, cover the spinach with the other half of the pastry, pressing the edges gently with your thumb, then follow along with a fork to seal it. After sealing, make incisions across the top of the pastry. Place them in a parchment paper-lined baking tray, then brush the top with some eggwash. Chill them in the fridge for 30 minutes while preheating the oven to 400 degrees F. Once done chilling, place them in the preheated oven and bake them until golden brown. Serve and enjoy!
