Place the diced pork in a bowl and add 1 tablespoon of dark soy sauce. Thoroughly mix until everything is well coated then set it aside for 30 minutes. Place the boneless chicken in a different bowl and add 1 tablespoon of dark soy sauce just like the diced pork. Mix then set aside for 30 minutes.
Crack 3 eggs in a bowl then season with salt and pepper. Beat well. Pour some vegetable oil into a wok or pan. Once the oil is hot, add the beaten egg to the wok. Let it set first then scramble. Transfer to a plate.
Add some more vegetable oil to the same wok. Fry the marinated pork and season with a little bit of salt and pepper. Cook until brown on all sides. Transfer into a bowl once done cooking.
Add more vegetable oil, then add the seasoned chicken. Season with a little salt and pepper. Fry them for 5 to 6 minutes. Once done, put back the cooked pork. Add minced garlic and chopped onions. Fry for about 3 to 4 minutes.
Add the carrots and green peas. Stir then fry for 2 minutes. Next, add the rice, and scrambled eggs. Mix all ingredients well. Season it with 2 tablespoons of dark soy sauce, 2 tablespoons of light soy sauce, 1/2 tablespoon of sesame oil, and spring onions. Stir until all ingredients are combined. Taste and adjust seasonings if needed. Lastly, add the cooked prawns, mix and turn off the heat. Serve and enjoy!
