This southern-style recipe has no crust and has layers of bananas, vanilla wafers, and a delicious pudding topped with a gorgeous meringue. Ingredients:

For the pudding:

  • 1 box of vanilla wafers
  • 3 – 4 very ripe bananas, peeled and sliced
  • 1 & 1/2 tsp freshly squeezed lemon juice

For the custard:

  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 1/3 cup + 1 tbsp all-purpose flour
  • 1/4 tsp fine salt
  • 2 cups milk
  • 1/2 tsp vanilla extract
  • 1 tbsp banana liqueur, optional
  • 1 tbsp cold butter

For the meringue topping:

  • 4 large egg whites
  • 1/8 tsp cream of tartar
  • 2 tbsp white sugar

Directions:

Step 1

Begin by separating 4 large eggs with the whites going into a mixing bowl and the yolks going into a saucepan. Once those are separated, continue by adding 1/2 cup sugar to the yolks followed by 1/4 tsp salt, 1/3 cup + 1 tbsp all-purpose flour, and 2 cups milk (divided). Mix everything well and once it’s nice and smooth, pour the rest of the milk. Place the saucepan on the stove over medium heat and cook it while stirring until it thickens up. Once it thickens up, remove it from the heat and add 1/2 tsp vanilla extract, 1 tbsp banana liqueur (optional), and 1 tbsp cold butter. Keep stirring it until the butter disappears, then set it aside. Next, moving on to the bananas, peel them, then cut them into about 1/4″ slices. Transfer them into a bowl and add 1 & 1/2 tsp freshly squeezed lemon juice. Mix it.

Step 2

Now, it’s time to assemble the pudding. Transfer about 1/4 of your pudding into the bottom of a 10″ baking dish. Spread it out evenly, then top it with a layer of vanilla wafer cookies. After this, layer 1/2 of the sliced bananas, then spread on the top half of the remaining pudding. Once that’s been spread over, go ahead and top that with a second layer of vanilla wafers then top it with the rest of your bananas. Finish it off by spreading the rest of the pudding. Set it aside. Now, to make the meringue, add 1/8 tsp cream of tartar to the egg whites and start whipping it on a high speed. Once it gets foamy, sprinkle 2 tbsp white sugar at a time. Keep whisking until stiff peaks. Spread this over the pudding all the way to the edges. Place it in the oven at 400 degrees F and bake for 7 to 10 minutes or until the top is browned.
