Ingredients:

  • 5 catfish fillets
  • 2 cups of cornmeal
  • 2 cups of all-purpose flour
  • 2 tbsp yellow mustard
  • 2 eggs, beaten
  • 2 tbsp creole seasoning
  • 1/2 cup hot sauce
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp ground black pepper
  • 1 tbsp onion powder
  • 1 tsp cayenne pepper (optional)

Directions:

Step 1

To start, pour enough cooking oil into your deep fryer and heat it to 330 to  350 degrees F. While waiting, prepare the catfish; pat them dry and set them aside. Next, combine 1 tbsp ground black pepper, 1 tbsp garlic powder, 1 tbsp paprika, 1 tbsp onion powder, and 2 tbsp creole seasoning. Mix well. Now, add 2 cups of cornmeal, 2 cups of all-purpose flour, and 3 tbsp of the spices mixture in a ziplock, then shake well.

Step 2

Next, beat two eggs in a large bowl, then add 2 tbsp yellow mustard, 1/2 cup hot sauce, and the rest of the spices mixture. Mix well. After this, dredge the catfish with the egg mixture, then onto the flour cornmeal mixture. Place them in the deep frying basket, then submerge them into the preheated oil. Cook them until nice, crispy, and golden brown. Serve and enjoy!
