It only requires a couple of ingredients, and most are pantry staples, making this a budget-friendly meal you can easily prepare for the whole family. You only need whole milk, chicken broth, garlic powder, onion powder, paprika, cayenne pepper, instant grits, cheddar cheese, bacon, eggs, and butter. The bacon adds a nice savory touch to your grits. Serve it with scrambled eggs, pulled pork, roast beef, mixed greens, or toast.
Place the bacon slices on a cold skillet and cook until crispy. Transfer to a plate lined with paper towel. Chop into crumbs.
Preheat your oven to 350F.
In a saucepan, add 2 cups of whole milk and 2 cups of chicken broth. Season with pepper, garlic powder, onion powder, paprika, and cayenne pepper. Stir to combine. Place the lid and let it come to a boil.
Once boiling, mix and stir in 1 cup of grits.
In a bowl, break 2 eggs and whisk well. Pour a little bit of the grits into the egg while whisking. Transfer the grits into the pot while whisking continuously.
Add 4 tablespoons of unsalted butter and mix until fully melted. Turn off the heat.
Add 2 cups of cheddar cheese and mix until melted.
Grease your baking dish with butter, then add the grits. Top with bacon crumbs and more cheese.
Place in the preheated oven and bake at 350F for 20 minutes. Serve and enjoy!
