To start, bring a pot of salted water to a boil and add the egg noodles. Cook according to its package directions. Once done, drain well, add some olive oil to prevent it from sticking, and set aside. Next, heat a large skillet and add the ground beef. Break them up and cook until brown. After this, add the chopped onion and minced garlic. Continue cooking until fragrant, then add the tomato sauce and diced tomatoes. Season with 1 tbsp Worcestershire sauce, 2 tsp smoked paprika, red pepper flakes, salt, and ground black pepper. Mix everything well and let it simmer until sauce is thickened.
In the meantime, combine 8 oz sour cream, 8 oz small curd cottage cheese, 1/2 cup shredded parmesan cheese, and the cooked egg noodles in a large mixing bowl. After this, spoon half of the pasta mixture into a baking dish and top it with half of the ground beef mixture and 1 cup shredded cheddar cheese. Repeat with the layers one more time, then finish with the remaining cheddar cheese on top. Place the baking dish in a 350 degrees F oven and bake for 25 to 30 minutes. Garnish with freshly chopped parsley and serve.
