Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup crushed pineapple, drained (reserve 3 – 4 tbsp)
  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp nutmeg (optional)

Icing:

  • 1 1/2 cups powdered sugar
  • 3 – 4 tbsp reserved pineapple juice
  • 1/4 tsp vanilla extract

Directions:

Step 1

Preheat your oven to 375 degrees F and line your baking sheet with parchment paper. Next, combine 1/2 cup softened unsalted butter and 1 cup granulated sugar in a large mixing bowl and whisk them together until light and fluffy. After this, whisk in one large egg and 1 tsp vanilla extract. Then, add 3/4 cup crushed pineapple and fold until just combined. Set aside. In another bowl, add 2 1/2 cups all-purpose flour, 1 1/2 tsp baking, 1/2 tsp baking soda, 1/4 tsp salt, and 1/4 tsp nutmeg. Mix them all together, then gradually add the flour mixture to the wet mixture (don’t overmix).

Step 2

Once done, drop rounded tablespoon of dough into the prepared baking sheet, leaving just enough space in between. Place the cookies in the preheated 375 degrees F oven and bake for ten to twelve minutes or until the edges are golden brown. After baking, remove them from the oven, let them cool for a few minutes, then transfer them to a wire rack to cool completely.

Step 3

In the meantime, make the icing. Combine together 1 1/2 cups powdered sugar, 3 – 4 tbsp reserved pineapple juice, and 1/4 tsp vanilla extract in a medium bowl until smooth. Once the cookies are completely cool, drizzle or pipe the icing over the top of each cookie, then let it set before serving.
