Boil water in a pot. Next, in a bowl, add 3 oz room temperature cream cheese followed by 1/4 cup room temperature milk. Place this over the pot of boiling water and stir to melt the cream cheese. (Turn the heat on low at this point.) When the cream cheese mixture becomes smooth, add the butter, continue to whisk, then remove from heat. Add egg yolks one by one while mixing the mixture. (Total of 3 egg yolks.) After this, add 1/4 tbsp lemon juice, a pinch of salt, and 1 & 1/2 tsp honey. Mix it well, then add 1/4 sifted cake flour and 1 & 1/3 tbsp cornstarch. Mix well until the consistency becomes smooth, then set it aside. Next, in a bowl, add 240 ml egg whites and beat it with a handheld mixer. When it foams up, add 1/4 cup sugar. (Add the sugar in 3 batches.) After this, add 1/4 tbsp lemon juice.

Add the meringue little by little to the egg yolk mixture while folding. After adding all the meringue, continue to fold it until combine completely, then pour it into the mini cake molds (12.3 x 7.7 x 3.5cm). Transfer the mini cake molds to a large baking tray, pour hot water on the tray, then bake in the preheated oven at 350 F for 7 minutes and to 240 degrees F for 58 minutes.
