Have a bunch of lemons at home and don’t know what to do with them? Try this soft lemon curd cookies recipe by Cooking tree 쿠킹트리 – I’m sure you won’t regret it. They turned out amazing, especially the lemon curd. Everyone loved it, and they’ve been asking me to make it again this weekend.

In a large mixing bowl, mix sugar, salt, and lemon zest. Next, stir in melted unsalted butter, vanilla extract, and lemon juice.
Add the eggs and yellow food coloring. Whisk until well incorporated.
Sift the cake flour and baking powder directly into the mixture to remove lumps.
Mix everything until well combined. Cover the bowl with a cling wrap and refrigerate for 1 hour.
Make the lemon curd. In a small pot, add egg yolks, sugar, and a pinch of salt. Mix everything until well combined. Next, add the cornstarch, milk, lemon juice, and lemon zest. Stir until well combined.
Place the pot over heat and stir constantly until it becomes thick and smooth. Remove from heat and add unsalted butter.
Strain the lemon curd to remove any lumps and transfer to a bowl. Cover with cling wrap and let it cool to room temperature.
Get about half a tablespoon of the batter and roll it into a ball. Cover it with powdered sugar then place on a baking sheet lined with parchment paper. Repeat with the remaining mixture.
Using a teaspoon or your thumb, press the center of each ball to make a well. Bake inside the oven at 329F for about 12 minutes.
Mix the cooled lemon curd then transfer to a piping bag. Fill each cookie with the mixture. Serve and enjoy!
