Ingredients:

  • 2 eggs, room temp
  • 1/2 cup of sugar
  • a pinch of salt
  • 4 oz butter, softened
  • 2 1/4 – 2 1/2 cups of plain flour
  • 3 tsp baking powder
  • 2 Granny Smith apples
  • icing sugar
  • ground cinnamon (optional)

Directions:

Step 1

Crack two eggs in a large bowl, then add a pinch of salt and 1/2 cup of sugar. Whisk using an electric mixer until the sugar dissolves. Next, add the softened butter and continue to mix until the butter is incorporated. Now, gradually add the flour along with 3 tsp baking powder while whisking the mixture. Set it aside. Next, peel, de-seed, and chop the apple into small pieces and mix them into the batter.

Step 2

Now, scoop a heaping tablespoon into a parchment paper-lined baking tray. Repeat this until you finish up the mixture. Once you’re done, place the baking tray in a 350 degrees F oven and bake the cookies for about 20 minutes.
