I have already tried different versions of smothered pork chops, and this one is truly one of the best that I have ever made at home. This recipe will not only teach you how to make crispy pork chops, but will also guide you in making the best-tasting gravy sauce and mashed potato. They are all easy to make and perfect for dinner. Season the pork chops on all sides with all-purpose seasoning, Italian seasoning, cayenne pepper, and garlic powder. Press the seasonings to the meat.
Make the brine. In a bowl, add the buttermilk, hot sauce, and Worcestershire sauce. Mix then place the pork chops. Marinate for 1-4 hours in the fridge.
Drain the potatoes, then mash. Set aside. In a skillet, add the butter then add the garlic and thyme. Once melted, add the heavy cream. Whisk it in, then add the sour cream. Mix until well combined. Season it and add the cheese. Whisk well. Make a taste test and adjust seasonings if needed. Pour into the mashed potatoes and mix well.
Add the seasoned flour in a flat container. Remove the meat from the fridge. Get the pork chops and coat with seasoned flour. Place on a baking tray lined with aluminum foil.
Heat a generous amount of oil into a pot about 330 to 350F. Add the coated pork chops and cook until crispy and brown.
Make the gravy. In a pot, melt the butter, then add the sliced onions. Once the onions have color, mix in the seasoned flour. Next, pour the broth, increase the heat and bring it to a boil. Add the soy sauce and mix well. Lastly, mix in the heavy cream. Taste and adjust seasonings if needed.
Add the pork chops to the gravy and spoon the sauce on top of each one.
Serve the smothered pork chops with the mashed potato. Enjoy!
