Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • salt and black pepper, to taste
  • 1 cup sun-dried tomatoes, drained and chopped
  • 4 cloves of garlic, minced
  • 1 small onion, sliced
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 2 cups baby spinach
  • 1/4 cup freshly grated parmesan cheese
  • fresh parsley, for garnish

Directions:

Step 1

In a small bowl, add 1 tsp dried oregano, 1/4 tsp crushed red pepper flakes, 1/2 tsp garlic powder, 1 tsp dried thyme, 1/2 tsp onion powder, salt, and ground black pepper. Mix well. Season the chicken breasts with the herb mixture, then brown the chicken on both sides on a large skillet over medium-high heat. Once done, transfer the cooked chicken to the slow cooker. Add the sliced onion, minced garlic, sundried tomatoes, and 1 cup low-sodium chicken broth.

Step 2

Cover the slow cooker, set it on low, and cook for three to four hours until the chicken is tender. After the cooking time, remove the chicken and add 1/2 cup heavy cream and 2 cups baby spinach to the slow cooker and stir them in together with the sauce. Add the chicken back and sprinkle 1/4 cup freshly grated parmesan cheese. Cover and cook for another 15 minutes. Serve and enjoy!
