I am curious how this sour cream and onion mashed potatoes would taste like because I’ve only had it in a baked potato form. Also, they remind me of the sour cream and onion potato chips, which are some of my favorites. These mashed potatoes can go along with anything as a side dish such as a steak, salmon, or fried chicken. It’s so rich and creamy. Plus, you can make a large batch and have leftovers for the rest of the week. This can also be another way to make mashed potatoes for the holidays.
First, add the peeled and diced potatoes to the slow cooker. Then, add the minced white onions, garlic cloves, and water. Add the lid to the slow cooker and cook on HIGH for 5 hours.

Next, drain off the water by using a colander or use 2 potholders and a spoon to hold the potatoes back to drain the water out. Add the stick of butter to the center of the potatoes so they can melt. Then, add the sour cream, salt, and pepper to taste. Use a hand mixer to blend the potatoes smoothly or a potato masher. Stir in the sliced green onions and chives.
I would’ve never thought of making mashed potatoes in a slow cooker, but it is a good idea because you can keep it warm before and during serving.
