I can’t think of any slow-cooked whole chicken better than this recipe from RecipeTin Eats on Youtube. This recipe has been a staple in my house for a couple of years now, and my family still clears their plates whenever I serve this slow-cooked chicken. It’s the juiciest chicken I’ve ever tasted, and the sauce is just perfect! This really hits home, and I’m glad I was able to discover this recipe. Watch the video below to learn how to make this.
Combine 2 1/2 tbsp olive oil, 1 tsp dried thyme, 1/2 tsp dried parsley, 1/2 tsp dried oregano, 3/4 tsp salt, 1/2 tsp black pepper, minced garlic, lemon zest, and lemon juice in a small mixing bowl. Mix all well together. Next, loosen the skin of the chicken using a spoon, then rub the herb mixture under the skin, spreading it nicely and evenly all over. After this, insert half a lemon inside the chicken. ( You can tie the opening close, it’s up to you.)

Once you’re done prepping the chicken, place it on the slow cooker and pour the rest of the herb mixture over the chicken. Put the lid on and set the slow cooker on low and cook for five hours or high for three hours. After slow cooking, transfer the chicken to a baking dish, drizzle some olive oil, and broil or grill it for five to ten minutes. For the lemon sauce, pour the excess liquid from the slow cooker into a saucepan, then add 1 tbsp cornflour mixed with 1 tbsp water. Simmer while mixing until it thickens. Serve and enjoy!
