Ingredients:

  • 3 – 4 boneless skinless chicken breasts
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp cayenne
  • salt and pepper (to taste)
  • 16 oz carrots, peeled and quartered
  • 16 oz baby red skin potatoes, halved
  • 16 oz green beans, trimmed
  • 1 large onion, diced
  • 4 cloves of garlic, minced

For the sauce:

  • 1/2 cup low-sodium soy sauce
  • 1/2 cup honey
  • 1/4 cup ketchup
  • 1 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp red pepper flakes
  • 1/4 tsp cayenne pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • salt and pepper (to taste)

Directions:

Step 1

Season the chicken breasts with some Italian seasoning, garlic powder, cayenne pepper, and salt and pepper. Set aside. In the slow cooker, add the green beans, red-skin potatoes, onion, minced garlic, and carrots. Season them with salt and pepper, then mix. (Make sure to chop your veggies accordingly.) Add the seasoned chicken breasts right over the veggies. Next, in a bowl, combine the soy sauce, ketchup, honey, Italian seasoning, cayenne pepper, red pepper flakes, onion powder, garlic powder, salt, pepper, and olive oil. Mix well.

Step 2

Pour the sauce over the top of the chicken and veggies evenly. Put the lid on and set the slow cooker on high for three to four hours or low for seven to eight hours.
