Place the chicken breasts in the slow cooker. Season it with 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 2 teaspoons of chili powder.
Add the diced onion and poblano pepper.
Pour the enchilada sauce over the chicken and vegetables.
Place the lid and cook for 6 to 8 hours on low setting.
Once done cooking, get two forks and shred the chicken. Add sour cream, half cup of cheese, and green onions. Stir until well combined.
Stir in the cooked rice, then sprinkle the remaining cheese.
Cover it with the lid and cook for another 15 minutes or until the cheese has melted. If your rice is already cooled, you need to cook it longer, about 45 minutes, on high.
