Coat the chuck roast with 2 tbsp all-purpose flour, then season with 1/2 tsp salt, and 1/2 tsp black pepper. Heat 2 tbsp cooking oil in a large heavy-bottomed pot over medium-high heat, then place the chuck roast, seasoned side down, in the hot oil. Sear it for four to five minutes. While searing, go ahead and flour the other side, then season with salt and black pepper as well. In the meantime, chop the veggies accordingly and set them aside. After five minutes, flip the chuck roast to the other side and sear for another five minutes.
Spray the crockpot with some non-stick cooking spray, add half of the veggies at the bottom, and place the chuck roast on top. Add the rest of the veggies over the chuck roast along with the minced garlic. Now, add 14 oz beef broth to the pot where you seared the chuck roast along with 15 oz tomato sauce, 1 1/2 cups orange juice, 2 tbsp brown sugar, 2 tsp ground cumin, 1 tsp ground coriander, 1 tsp chili powder, 1 tsp dried oregano, 1/2 tsp ground cinnamon, 1 tsp unsweetened cocoa powder, and 1 tbsp cornstarch. Whisk everything together, scraping off the bottom, over medium heat. Once heated through, turn off the heat.
Pour over the gravy into the slow cooker, place the lid on, set it on low, and cook for eight to ten hours. After cooking, put it on a serving plate and garnish it with freshly chopped parsley. Serve and enjoy!
