Easy Birria Beef Tacos Ingredients

  • 3 lbs of boneless chuck roast
  • 1 tablespoon of cooking oil (vegetable, canola, or avocado)
  • 1 1/2 teaspoons of coarse ground pepper
  • 1 1/2 teaspoons of salt
  • 4 dried Guajillo chiles
  • 7 to 8 dried arbol chiles
  • 5 to 6 Chipotle chiles in adobo (from a can)
  • 1 white onion (thinly sliced)
  • 8 whole cloves of garlic (peeled and smashed)
  • 32 oz of beef stock
  • 2 tablespoons of tomato paste
  • 14.5 oz can of fire-roasted diced tomatoes
  • 2 tablespoons of lime juice
  • 1 tablespoon of ground cumin
  • 1 tablespoon of dried Mexican oregano
  • 1 teaspoon of dried thyme
  • 2 cinnamon sticks
  • 2 dry bay leaves
  • 1 teaspoon of ground cloves
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of ground coriander
  • 1 teaspoon of dried minced onion (or 1/2 teaspoon of onion powder)

 

How to Make Birria Beef Tacos Using Slow Cooker

Step 1:

Start by seasoning the chuck roast with salt and pepper on all sides. Preheat a cast iron skillet over medium-high heat.

Step 2:

Once the oil is hot, add the meat and sear for 4 to 5 minutes on all sides.

Step 3:

In the crockpot, add all the remaining ingredients and stir to combine.

Step 4:

Add the chuck roast into the crock pot and place the lid to cover. Let it cook for 9 to 10 hours on low setting.

Step 5:

Remove the chuck roast from the crock pot and place it in a bowl. Using 2 forks, shred the meat.

Step 6:

Remove the bay leaves, cinnamon sticks, and pepper stems and discard them.

Step 7:

Blend the sauce until smooth using an immersion blender. You can also use a food processor or stand blender.

Step 8:

Pour one cup of the sauce over the shredded meat and stir to coat.

Step 9:

Assemble the tacos. Place a frying pan over medium-high heat. Once hot, add cooking oil to the pan. Dip each side of the tortilla into the sauce using a pair of tongs, then double them for frying. Place into the frying pan flatly and fry for about 2 minutes, then flip. On one half of the tortilla, spread a bit of sauce, meat, onions, and cilantro. Fold it in half and fry each side for 2 minutes.

Step 10:

Spoon some sauce over each side of the tortilla after frying.
