Add the cake mix and other ingredients listed on the back of the cake mix (oil, eggs, and water) in a large mixing bowl. If you are using milk and butter, instead of oil and water, go ahead and add it instead. Whisk everything together until well combined.
Spray a 6-quart oval crockpot with non-stick spray, then pour the cake batter.
Thoroughly wash and peel 4 baking apples. Cut them in half from top to bottom, then slice in half again. Cut a “v” shape along the center of each quarter to remove the core. Rub half a lemon on the whole apple quarters to keep them from browning, then chop them into bite-sized pieces about 1/4-inch. Place them in a crockpot on top of the cake batter. Spread evenly.
In a medium mixing bowl, add orange juice, honey, melted butter, and cinnamon. Whisk together until well combined, then pour it over the apples. Get a knife, and use it to swirl the cake batter, apples, and mixture. Do not over-mix it.
Place a tea towel or kitchen towel over the top of the crockpot and place the lid. Let it cook on high for about 2 to 3 hours. The cake should be cooked through and the apples tender. The pudding will settle underneath the cake. Serve it with ice cream and enjoy!
