Step 1
Chop the onions, then mince the garlic, and set them aside. Brush and clean the mushrooms well, trim the bottoms of the mushrooms if dried out. If the mushrooms are small, keep them whole, but if they are large, then cut them in half. Place them in a large bowl and set them aside. Place a large skillet pan on a stove over medium-high heat, drizzle some olive oil and let it heat up. Add in the mushrooms, give it a good stir and let it cook for about 3 to 5 minutes until they start turning brown and caramelized.

Step 2
Add in about two tablespoons of butter, then let it melt a bit before adding in the onions and garlic. Cook them for about 3 to 5 minutes or until it has lightly caramelized and softened. Pour in the stock or wine, add in the lemon zest, lemon juice, and chili flakes, then cook them for another 2 minutes or until the liquid has reduced down a bit. Add the remaining two tablespoons of butter and chopped parsley, then let them cook for an additional 1 minute before seasoning them with salt and pepper. Best served warm.
