Whenever I have a long and busy day, I always relieve it with some good and tasty meals. One of the favorite go-to recipes is this steak and potatoes by Cooking With Claudia on YouTube. Usually, I would prepare quick and easy crockpot recipes, but this meal is an exception. I don’t mind going all through the process even if I’m tired, because it goes away once the tasty steak meets my stomach. It was just a satisfying and hearty meal that I can enjoy with a glass of wine.
Step 1
Remove your steak from the fridge and thaw it until room temperature for about 30 minutes. Season it with salt and pepper on both sides of each steak, strip the thyme, parsley, rosemary, and oregano from their stem, and finely chop them together. Transfer a handful to a bowl with softened butter, then save the rest for later, add crushed garlic, and mix it until well combined.
*Note: For the freshly chopped herbs, use 2 teaspoons each for the steak, and 1 teaspoon each for the potatoes

Step 2
Put half of the herb mixture on the steak and save the rest for later, rub the herb mixture all over the steak until fully covered, leave it while coming to room temp to marinate well. In a hot skillet, heat the olive oil and butter. Once the butter has melted, add in the potatoes cut into bite-sized pieces, toss the minced garlic, as well as a handful of fresh herbs. Season with salt and pepper, then stir everything together until well combined, cook over medium heat for about 8 minutes or until the potatoes are cooked through.
Step 3
Remove the potatoes from the pan and set them aside, turn the heat to high and get the skillet smoky. Then add the steak and allow it to cook for 3 minutes over high heat without touching them, then cook the other side as well. Make sure that you bathe your steak with the juices on the skillet to keep it juicy and flavorful. Add the rest of the mixture on top of the steak and allow it to melt, then add the cooked potatoes on the side, turn off and remove from the heat, and it’s ready to serve.
