Super Soft 6-Ingredient Potato Cake Recipe

This delicious and super fluffy cake by 메리니즈부엌Meliniskitchen on YouTube is made out of only potatoes and no flour at all! What makes this even better than it already is, is the fact that it only requires about 6 ingredients to make. Plus, you can have this ready in just about 30 minutes. Isn’t that great? Ingredients:
- 2 pieces or about ½ pound of potatoes
- ½ teaspoon of salt
- 2 tablespoons of unsalted butter, at room temperature
- 2 eggs
- 2 tablespoons of milk
- Cheese of any kind
Directions:
Step 1
Wash and scrub the potatoes well, then peel off the skin before you start cutting them into smaller pieces. Add them to a large microwave-safe mixing bowl, then sprinkle half a teaspoon of salt, and add a splash of water. Give them a good toss, then microwave for about 6 minutes, and drain off the water if there’s any. Grab a fork, then start mashing the potatoes finely, add the unsalted butter, and continue mashing and mixing them together until smooth and well combined.

Step 2
Add the eggs, then mix them well before pouring the milk, and continue mixing until well combined. Switch to using a spatula, then mix and fold until smooth and fully combined. Grease a baking pan with some butter, then pour the potato batter, and spread them evenly. Preheat your oven to 180°C or about 356°F, then bake the cake for about 25 minutes or until cooked through. Unmold the cake, then transfer it to an oven-safe serving dish or plate, add cheese all over the cake, and put it back in the oven to bake until the cheese has melted. Slice, serve, and enjoy!
