This recipe by Inspired Taste on YouTube is probably the simplest way that you could use fresh strawberries in a pie! This is also one of my favorite desserts as it is refreshingly yummy.
Step 1
The first thing you have to prepare is the crust of your pie. Roll out the dough up to a size that would fit your pie dish, then gently place it into the dish, and trim the dough to within ½ inch of the edge of the dish. Fold the edges of the dough, then crimp it around, and poke holes at the bottom using a fork. Place two sheets of aluminum foil on top of the crust, then fill the center with pie weights or similar, then freeze it in the refrigerator for about 10 minutes or until firm to the touch. Preheat the oven to 425°F, then once the crust is ready, reduce the temperature to 400°F, and bake it for 20 to 30 minutes or until nice and golden. In a small bowl, whisk together the egg yolk and cream until well combined, then remove the pie weights and foil off the baked pie crust, and then brush the bottom and sides with the egg wash. Put it back in the oven, then bake it for about 3 to 5 minutes or until the egg wash is dry and shiny.

Step 2
Let it cool completely while preparing the strawberry filling. In a small saucepan, add 2 cups of sliced strawberries, and mash them until they are chunky, then add sugar, corn starch, vanilla extract, almond extract, lemon juice, and salt. Place it on a stove over medium heat, then bring it to a simmer while stirring occasionally. Let it cook for about 3 to 5 minutes or until the sugar dissolves and the mixture has thickened. Let the mixture cool completely, then combine the remaining 3 cups of strawberries, and stir until every piece of strawberries is well coated. Spoon the filling into the cooled pie crust, then place the pie in the refrigerator, and leave it for at least 2 hours to allow the filling to set. Cut and serve it topped with whipped cream.
