Preheat the oven to 400 degrees F.
Get a large skillet and bring the heat to medium. Place squash and onion then pour a small amount of water. Cover with the lid and cook until squash is tender for 5 minutes. The natural sugar of the squash comes out in this process. Once done, drain well and place in a large bowl.
In a medium bowl, mix cracker crumbs and cheese. Then combine half of the cracker mixture into the cooked squash and onions. Stir until incorporated. In a small bowl, mix together eggs and milk, then add to the squash mixture. Next, put the melted butter and season with salt and pepper to taste. Stir well.
Spread the mixture into a 9×13 inch baking dish. Next, make the topping for the casserole. In a bowl combine crushed crackers and cheddar cheese, then sprinkle on top of the casserole. Next, put dotted butter on top.
Put the dish inside the oven and bake for 25 minutes or until lightly browned. After 25 minutes, your casserole is ready to serve!
