Don’t have much time to prepare food? Here’s an easy shrimp fried rice recipe by Island Vibe Cooking. You don’t need a lot of time to cook delicious food at home. If you already have rice, you can make this in less than 30 minutes! It’s well-seasoned and tastes incredibly good. Season the shrimp with creole seasoning and onion powder. Mix until well seasoned. Next, crack 1 egg in a bowl and beat well.
Add 1 tablespoon of olive oil to a pan over heat. Add beaten egg and scramble it. Once done, remove from the pan.
In the same pan, add another tablespoon of oil and cook the shrimp for 1 to 2 minutes per side or until pink. Make sure not to overcook it. Remove and set aside.
Add 2 tablespoons of olive oil and chopped veggies. Cook for about 2 to 3 minutes until the onions are translucent. Next, add minced garlic and ginger. Cook until it’s golden brown.
Add 2 cups of rice, 2 tablespoons of dark soy sauce, cooked shrimp, and scrambled egg. Mix everything together until well combined. Season with black pepper and mix again. Serve on a platter and sprinkle with green onions if preferred. Enjoy!
