Fall gatherings won’t be completed without this scrumptious salad recipe from Natashas Kitchen! I’m telling you, one bite of this will surely remind you how beautiful and warm the Fall season is. It’s sweet, savory, and straight-up taste like the Fall season itself. It’s my favorite salad recipe, and I love how easy it is to put together. Serve this today and impress your family! Ingredients:

  • 1 1/2 lb sweet potatoes, peeled and diced into 1/2″ pieces
  • 1 tbsp olive oil
  • 1/2 tbsp maple syrup
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1 bunch of kale (10 cups chopped)
  • 1 apple, thinly sliced
  • pecans, lightly toasted (if desired)
  • 1/2 cup dried cranberries (or pomegranate seeds)
  • 2 oz goat cheese (1/2 cup crumbled)

Salad Dressing:

  • 3 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 clove of garlic, minced
  • 1/3 cup extra virgin olive oil
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper

Directions:

Step 1

Preheat your oven to 425 degrees F. Next, peel the sweet potatoes and dice them into 1/2″ thick pieces. Transfer them to a large bowl and drizzle 1 tbsp olive oil and 1/2 tbsp maple syrup, then season with 1/2 tsp sea salt and 1/4 tsp ground black pepper. Mix well, then scatter them onto a large baking sheet lined with parchment paper. Bake them in the preheated oven for 30 minutes. In the meantime, toast the pecans in a dry skillet until golden. Set aside.

Step 2

Next, make the dressing. Combine 3 tbsp apple cider vinegar, 1 tbsp maple syrup, 1 tbsp Dijon mustard, one minced garlic clove, 1/3 cup extra virgin olive oil, 1/2 tsp salt, and 1/8 tsp ground black pepper in a bowl. Mix until well combined. Next, roughly chop a bunch of kale and transfer them to a large mixing bowl. Drizzle 3/4 of the dressing over the kale, then toss the kale together using two forks for a couple of minutes until the kale reduces its size.

Step 3

Next, add the roasted sweet potatoes followed by the sliced apple, roasted pecans, dried cranberries, and 1/2 cup of crumbled goat cheese. Drizzle the rest of the dressing over, then serve.
