Preheat your oven to 450 degrees F and grease a baking sheet with nonstick cooking spray. Next, cut the tomatoes and arrange them, cut side up, on the prepared baking sheet. Set aside. In a mixing bowl, combine 3 tbsp melted butter, 1/2 tsp kosher salt, 1 tsp lemon zest, 1/2 tsp ground black pepper, and minced garlic. Mix together until combined. Next, stir in 1/2 cup panko bread crumbs and 1/3 cup chopped pecans. Once done, put a spoonful of the mixture on top of each tomato slice.
After this, put the tomatoes in the oven at 450 degrees F and bake for about six to eight minutes. After baking, garnish with some chopped chives and parsley, then drizzle with a bit of olive oil. Serve and enjoy!
