Preheat your oven to 425 degrees F and line your baking sheet with aluminum foil. Set it aside. Next, prep the brussels sprouts. Trim the bottom, take off the outer dead leaves, then cut each in half. Transfer them to a bowl and add 3 tbsp olive oil, 3/4 tsp kosher salt, and 1/2 tsp ground black pepper. Mix well and spread them nicely on the prepared baking sheet. Place it in the preheated 425 degrees F oven and roast for 20 minutes or until golden brown and caramelized.

After roasting, transfer them to a large mixing bowl and drizzle with 2 tbsp balsamic vinegar and 2 tsp honey. Mix well to coat each brussels sprout nicely and evenly. Serve and enjoy!
