Ingredients:

  • 1 lb brussels sprouts, trimmed and halved lengthwise
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/4 tsp garlic powder
  • 2 tbsp olive oil
  • 1/2 cup dried cranberries
  • 1/4 cup pine nuts (or walnuts or pecans)

Directions:

Step 1

Preheat your oven to 400 degrees F and line your baking sheet with parchment paper. Next, place the halved brussels sprouts in a large mixing bowl, then add 1/2 tsp salt, 1/4 tsp garlic powder, 2 tbsp olive oil, and freshly ground black pepper. Toss to coat, then transfer them to the lined baking sheet.

Step 2

Place the baking sheet in the oven and roast until golden brown (about 30 to 35 minutes). Add the cranberries and pine nuts during the last seven to ten minutes. Transfer to the serving plate and serve while it’s hot.
