Plus, the instructions for this tutorial are easy to follow along with and it’s very detailed. This is an easy recipe to make in large portions if you have a big family or want to meal prep for the week.

Ingredients:

  • 3 Chicken Breasts, butterflied and pounded, seasoned with salt and black pepper
  • 1 cup Whole Milk Ricotta
  • 1 cup Italian Blend Shredded Cheese
  • 8 oz. Spinach
  • 2 Garlic Cloves, chopped
  • 1/2 cup White Wine, dry (like Chardonnay)
  • Extra Virgin Olive Oil
  • Salt, to taste
  • Black Pepper, to taste
  • 1/2 cup chicken stock, optional

Directions:

First, add a drizzle of olive oil into a pan and saute the garlic over medium heat for about a minute, until golden. Cook the ricotta and spinach stuffing and mix it into a large bowl. Then, place the butterflied chicken breast on a cutting board and add a layer of the ricotta and spinach stuffing over each chicken breast and fold them over to close with long toothpicks.

Next, place the stuffed chicken on a large pan with olive oil over medium to high heat. Cook the chicken on each side for about three minutes and pour in the wine for a couple of minutes allowing the alcohol to evaporate. Then, transfer the stuffed chicken into the oven for 25 minutes.
