This rich chocolate pudding pie recipe by Stay At Home Chef is heaven for all the dessert lovers out there. It has three layers: the crust, pudding, and whipped cream. It’s so yummy and chocolatey. If you love eating sweets, this is the perfect treat for you.

Ingredients:

Crust:

  • 1 1/2 cup of graham crumbs
  • 5 tablespoons of melted butter
  • 1/3 cup of packed brown sugar
  • 1/2 teaspoon of salt

Chocolate pudding filling:

  • 2 cups of whole milk
  • 6 oz of semisweet chocolate (roughly chopped)
  • 4 large egg yolks
  • 3/4 cup of brown sugar
  • 1/4 cup of cornstarch
  • 1/2 teaspoon of espresso powder
  • 1/4 teaspoon of salt

For serving:

  • 3/4 cup of cold heavy cream
  • 2 tablespoons of powdered sugar
  • pinch of salt
  • chocolate curls (optional)

Instructions:

Step 1:

Make the crust. Add crushed graham, melted butter, brown sugar, and salt into a large bowl. Mix until well combined. Transfer the mixture to your pie mold. Press on the bottom, then on the sides. Place in the fridge and refrigerate for 25 minutes.

Step 2:

Make the filling. In a pot over heat, add the milk and chocolate chips. Mix until melted. In a bowl, add egg yolks and brown sugar. Mix with a hand-held mixer until it becomes light brown. Next, add the cornstarch, espresso powder, and salt. Mix again until it becomes thick.  Then gradually pour the milk chocolate while mixing. Pour back the mixture into the pot over heat. Continuously mix until it has a thick consistency.

Step 3:

Pour the mixture into the prepared crust and spread evenly. Cover with cling wrap and refrigerate for about 3 hours.

Step 4:

Make the whipped cream. Add heavy cream and powdered sugar to a bowl. Whisk until it becomes fluffy and thick.

Step 5:

Get the pie from the fridge and spread the whipped cream on top. Garnish with chocolate curls on top. Slice, then serve. Enjoy!
