When I found this awesome sheet-pan layered chicken quesadilla bake video recipe tutorial by, Ree Drummond, on YouTube, I was really excited to finally find a large one-pan bake recipe that I could make in one go, that would serve so many people. In fact, you may even think that this one-pan recipe is really easier than making regular quesadillas, once you have a look at this video tutorial. The most awesome thing of all is the fact that you can slice these delicious quesadillas and serve them straight out of the pan like most sheet-pan ideas, this casserole slides right out onto a plate. The other cool thing that Ree does, is to place another baking sheet on top of her pan of quesadillas to make a smashed effect like they use in many restaurants.

Ingredients For The Sheet-Pan Quesadilla Bake:

  • A package of large flour tortillas
  • 4 cups of grated cheese (you can add Monterrey Jack or Mozzarella if you like as well)
  • 1 can of sliced black olives
  • 1 to 2 cups of shredded rotisserie chicken (or whatever chicken you may have)
  • 1 small can of green chilis
  • 1 tablespoon of taco seasoning
  • Corn (optional)
  • 2 sheet pans

Then you will close the top and add 1 more tortilla to the center and place another sheet pan on top mashing the large quesadilla down and bake at 326° for 15 to 20 minutes.
