Growing up, potato salad was one of the best salads that I enjoyed. Hence, I have tried different recipes to top the prior one. This Southern style potato salad recipe by Smokin’ & Grilllin’ wit AB is in the top ranks. It’s super easy to follow and quick to whip up to your liking.

With the ingredients listed below, you know that it is a recipe bursting with flavor. Top it all off with some paprika before serving, and voila! Delicious.

Ingredients:

  • 5 – 6 Russet Potatoes peeled and cut into thirds
  • 1 Yellow Onion, diced
  • 5 – 6 Hard Boiled Eggs, peeled
  • 2 – 3 Celery Stalks, diced
  • 1 – 2 cups Mayo of your choice
  • 1 tsp – 3 tbsp Yellow Mustard
  • 1 cup Sweet Relish
  • 1 tsp Smoked Paprika for garnish
  • Salt and Pepper to taste
  • Creole kick
  • Paprika

Directions:

Prepare all the needed ingredients as stated above.

Place the potatoes in a pot with an inch and a half of water. Bring the potatoes to boil until just soft over high heat. Strain the potatoes and set them aside.

It is time to make the salad. Combine 1 cup of mayo, some Creole kick, and 1 tsp of mustard in a bowl. Mix until well combined.Then, add half of the 1 cup of sweet relish. Mix using a spatula and add pinches of salt and pepper to taste. Mix well until well combined and set aside.

In a separate bowl, combine the boiled potatoes with the dressing mixture. Add some diced onions, celery, and slices of all the hard-boiled eggs. Gently mix all the ingredients using a rubber spatula. Add the remaining ingredients as you please.

Place in the refrigerator for 1-2 hours to chill.

Serve, sprinkle with some paprika, and enjoy!
