This crockpot chicken noodle soup by The Anthony Kitchen is a combination of full-flavored chicken breasts, hearty veggies, egg noodles, and a flavorful broth. A delicious, soothing, and deeply satisfying soup—perfect for a cold and chilly dinner night with good company or enjoyed alone in the comfort of a great movie.

Prepare all the ingredients as stated above.
In a microwave-safe bowl, add all the prepared chopped vegetables and cover with plastic wrap. Place the bowl in the microwave and heat for about 2 minutes. This process will make the vegetables firm but not raw tasting. Carefully remove the bowl from the microwave and be more careful of the steam as you remove the plastic wrap.
To a crockpot, add the heated vegetables, along with 1 pound of sliced skinless chicken breasts, 8 cups of unsalted chicken broth, 1-2 bay leaves, 2 ½ tsp salt, 1 tsp garlic powder, and ¾ tsp of black pepper. Cover the crockpot with its lid and let the soup cook on high heat for about 2-3 hours on high or 5-6 hours on low heat.
Once ready and the chicken has cooked through, carefully remove it from the crockpot. Shred the chicken with two forks and return it to the crockpot along with 2 cups of egg noodles. Cover the crockpot again and cook for another 30-45 minutes on high.
Remove the bay leaves and transfer the soup into generous serving bowls.
It would be nice to choose your favorite special bowls for occasions when you’re having friends over. This soup is perfect for cold days when you and your family and friends would just want to gather around the dining table to keep warm with a hearty soup dish. It’s also very easy to make.
