Ingredients:

raspberry sauce:

  • 3/4 cup frozen raspberries
  • 3 tbsp water
  • 1 1/2 tbsp cornstarch
  • 1/2 cup sugar

filling:

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 1 tsp lemon juice

pastry:

  • 1 box of puff pastry (2 sheets) thawed

frosting:

  • 1 cup powdered sugar
  • 1/4 cup heavy cream or milk
  • 1 tsp vanilla extract

Other:

  • 1 egg + 1 tbsp of water (for the egg wash)
  • 2 tsp coarse sugar (for sprinkling)

Directions:

Step 1

In a heavy-bottomed saucepan over medium-high, add the frozen raspberries, 3 tbsp water, 1/2 cup sugar, and 1 1/2 tbsp cornstarch. Stir all in until melted and fully incorporated, then simmer for five to ten minutes. Set aside. Next, add the softened cream cheese in a stand mixer and beat it until fluffy. Once fully mixed, add 1/2 cup sugar and continue to beat for another two minutes, then add 1/2 tsp vanilla extract, 1 tsp lemon juice, and 1 egg yolk. Continue mixing for another two minutes until fully combined.

Step 2

Now, assemble the danish. Flour your puff pastry sheet and lightly roll it with a rolling pin without pressure. Add the cream cheese mixture to the center and lightly spread it out almost to the edge, leaving about half an inch. Then, add the raspberry sauce. Next, cut on the top and bottom to make a rectangle, then fold the flaps inwards and pinch to seal. After this, make five to eight diagonal slits on both sides, then fold each flap overlapping the other, starting from the bottom. Dust the excess flour afterward, then brush the whole top with eggwash.

Step 3

Place the bread in a 375 degrees F oven and bake for 25 to 30 minutes. While waiting, make the frosting. Combine 1 cup powdered sugar, 1/4 cup heavy cream or milk, and 1 tsp vanilla extract in a large mixing bowl. (Add the milk gradually while mixing.) Drizzle this over the danish, then serve.
