These delicious treats have colorful peppermint patties coated with a dark and crisp chocolate shell, so with each bite, you have the perfect balance of bitter and mint flavors. To make them at home, you only need 7 ingredients. The food coloring is definitely optional. You can make them in plain white if you want to. In a large bowl, add the sugar, water, corn syrup, shortening, and mint extract. Mix well with an electric mixer or by hand until a soft dough forms.
Equally divide the dough into 6 portions and dye each in a different color.
Get one of the portion and roll on a piece of parchment until it is about 1/8″ thick. Cover with parchment paper and repeat the same process with the next color. Stack them together. Make sure they are the same size and shape. Place in the fridge for an hour or until firm.
On a parchment paper, begin stacking one color on top of the other pressing to make them stick together. Cover with parchment paper and roll out the combined layers until about 1/4″ thick. Cut out circles using a cookie cutter, then place on a cookie sheet. Freeze for about 2 to 3 hours.
Dip the circles into melted chocolate to coat, then place on a baking sheet lined with parchment paper. Refrigerate until set.
