Ingredients:

  • 4 whole corn cobs
  • 3 tbsp extra virgin olive oil
  • 2 tbsp parsley (or coriander), roughly chopped
  • 1 1/2 tsp garlic powder
  • 2 1/2 tsp smoked paprika
  • 2 tsp kosher salt
  • 2 tsp ground black pepper
  • 3 tbsp unsalted butter
  • 1 garlic clove, finely minced

Directions:

Step 1

Preheat your oven to 375 degrees F. Cut off the base and the pointy top of the corn, then cut into half, then half again, in an upright position. Set them aside. Next, add 1 1/2 tsp garlic powder, 2 1/2 tsp smoked paprika, 2 tsp kosher salt, and 2 tsp ground black pepper in a small mixing bowl and mix well. Set aside. Melt 3 tbsp unsalted butter in a saucepan over medium heat, then add the minced garlic. Cook until fragrant, then remove from the stove and keep it warm.

Step 2

Now, drizzle the corn with 3 tbsp extra virgin olive oil, toss, then add the seasoning mixture. Mix until each piece is coated with the seasonings well. Once done, place them on a baking sheet, kernel side up, and bake them in the preheated oven for 25 to 30 minutes. After baking, transfer the corn to a large mixing bowl and drizzle the garlic butter mixture. Toss, then transfer to a serving plate. Garnish with some finely chopped parsley. Enjoy!
