Peel all the potatoes. Fill a pot with enough water to submerge all of the potatoes. Add some salt and cook them for about 15 minutes on moderate until they become just soft.
Remove the potatoes from the pot and drain the water. Cut the potatoes into circles. Add some sliced butter to the bottom of the casserole dish and transfer the sliced potatoes. Spread the potatoes in an even layer. After that, add more butter on top.
In a medium bowl, crack 3 eggs and add 2 2/3 cups of milk, salt, ground pepper, paprika, and oregano. Whisk until well combined.
Pour the egg and milk mixture over the potatoes, then sprinkle the grated cheese on top. Make sure to cover everything.
Place the casserole inside the preheated oven at 374 degrees Fahrenheit for about 25 minutes or until the cheese is melted and browned on the top.
Remove the dish from the oven and let it cool for a while. Chop some fresh parsley and sprinkle on top to garnish. Serve and enjoy with friends and family.
