I personally love blueberries and become picky when they turned into delicious treats. One of my favorite recipes that I’ve come to love is this blueberry lemon loaf cake by RecipeTin Eats on YouTube. The perfect blend of blueberry and lemon, topped with a light and sweet glaze.

Directions:
Prepare all the needed ingredients.
Preheat the oven to 390F.
Grease a loaf pan with butter, line it with parchment paper, and set it aside.
In a large mixing bowl, toss in 1 ½ of frozen or fresh blueberries and add 2 tsp of flour. This method will keep the blueberries suspended in the batter.
In a separate mixing bowl, combine 1 ¾ cups of all-purpose flour, 1 cup white sugar, 2 tsp baking powder, and a pinch of salt. Whisk well until all the ingredients are well incorporated.
Then, add 1 cup of plain yogurt, ½ cup canola oil, 2 tsp lemon zest, 3 large eggs, and ½ tsp vanilla extract. Mix well until all the ingredients are evenly combined. Next, add in the blueberries with flour. Fold until the blueberries are evenly distributed.
Pour in the mixed batter into the prepared, lined load pan. Carefully place the pan in the oven to bake for 50 mins. After that, cover the pan with foil and bake it further for 15–25 minutes, or until a skewer comes out clean when you test it.
When it’s done, let the loaf rest for 5 minutes, then transfer it to the baking tray, and let it cool.
For the lemon glaze, combine 1 ½ cups of soft icing sugar, 2 tbsp of lemon juice, and 1-2 tbsp of milk in a mixing bowl. Whisk until you make a creamy and smooth glaze.
Pour over the blueberry lemon loaf.
Lastly, top it all off with lemon slices and blueberries.
