Preheat your oven to 425 degrees F and line a rimmed baking sheet with parchment paper. Put your salmon filet right in the center of the baking sheet. Drizzle it with olive oil and season it with garlic salt and freshly cracked black pepper to taste. Place it in the preheated oven at 425 degrees F and bake it for ten to fifteen minutes or just until the salmon is cooked through. After baking, flake the salmon with a couple of forks, removing any bones, then set it aside and let it cool to room temperature. Next, prepare the veggies. Peel and diced the onion and seed and finely dice half of a red bell pepper. Now, place a skillet over medium heat, and 1 tbsp of olive oil and 1 tbsp of butter. Once the butter melted, add the chopped onion and bell pepper and saute for seven to nine minutes.

Next, combine the flaked salmon and sauteed onion and bell pepper in a large mixing bowl. Add 1 cup of bread crumbs, two beaten eggs, 3 tbsp of mayo, 1 tsp of Worcestershire sauce, 1 tsp of garlic salt, 1/4 tsp of black pepper, and 1/4 cup of freshly chopped parsley. Mix everything until well combined. Now, to make the patties, grab an ice cream scoop. Use this to scoop the mixture and form each patty between your hands, about 1/3″ to 1/2″ thick. Next, heat a pan over medium heat and add 1 tbsp of butter and olive oil each. Once the butter has melted, add the salmon cakes in a single layer and fry them for three to four minutes per side.
