Step 1
If you don’t have toasted pecans ready, you can pre-toast them at 350°F for 10 minutes (move the pecans around halfway), then set aside and let them cool. Put the wafers in the food processor and pulse until crushed, then transfer to a bowl. Put the toasted pecans on the food processor as well, then pulse until they are finely chopped, then transfer to the same bowl as the wafers, reserve about ¼ cup for rolling.

Step 2
Get the bowl of processed wafer and pecan, then sift powdered sugar, salt, and cocoa onto it. Whisk them until well-combined. In a separate bowl, combine the rum and honey until the latter is completely dissolved. Pour the rum mixture onto the dry ingredients and combine with a spatula, add more rum as needed.
Step 3
Prepare three small bowls for ¼ cup portion of crushed wafer and pecan, cocoa powder, and powdered sugar for rolling. Using a tablespoon, scoop out from the mixture and roll them into a ball between your palms. Coat them in cocoa powder, powdered sugar, or crushed wafer.
