Ingredients:

  • pulp of 2 ripe mangoes
  • 1 & 1/4 cups of milk + 1/4 cup milk (to be used in the slurry)
  • 1/2 cup sugar
  • 2 pinches of salt
  • 1/4 cup corn flour
  • juice of half lime

Directions:

Step 1

Slice the mangoes and scoop out the pulp into a blender jar (or blender.) Next, add 1/2 cup sugar, and 2 pinches of salt. (You can adjust the sugar depending on how sweet you like it.) Blend the mangoes to get a smooth puree. After this, pour in 1 & 1/4 cups of milk. Blend it again. After blending, transfer the mixture into a cooking pot. In a small bowl, add 1/4 cup corn flour and 1/4 cup milk. Stir well to form a slurry and set it aside. Next, place the pot with the mango mixture on a stove at medium heat. Stir it while it’s being cooked. Once it begins boiling, reduce the heat to low. Stir in the slurry slowly and don’t stop stirring the mixture to prevent lumps. Stir vigorously to ensure a smooth consistency.

Step 2

Continue stirring on low heat for four to five minutes. (It will start to thicken and bubble at this point.) Turn off the heat. Squeeze in the lime juice. (The lime will give the dessert a lovely balance.) Pour the mixture into greased molds. (Use any neutral cooking oil for greasing.) Cool the mixture to room temperature, then put it in the refrigerator for two hours. After refrigerating, un-mold the pudding carefully and transfer it to a saucer, then serve. (Garnish it with some mango or mint, it’s up to you.)
