Ingredients:

  • 4 large potatoes
  • 1/4 cup butter, melted
  • 2 tbsp parsley, chopped
  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • sea salt, to taste

Directions:

Step 1

Preheat oven to 400 degrees F. Next, clean your potatoes thoroughly and peel them. After this, cut the ends, then cut the potatoes lengthwise into 1/4″ – 3/8″ slices. (Larger slices are harder to manipulate, so make sure to stay within these sizes.) Next, place two skewers on both sides of the potato that is placed horizontally. Cut across the potato to make lines. The skewers will act as a base so you don’t cut all the way through. Now, flip the skewer over and cut diagonal lines. This will help to make the accordion shape.

Step 2

Now, take a skewer and push it through the potato and pull it down the skewer. Repeat this process until you have all your potatoes through a skewer, then lay them in a parchment paper-lined baking tray. Next, prepare the garlic herb butter by combining all the ingredients. Spread that onto both sides of the potatoes. Place them in the oven and bake for about 40 minutes.
